Will cow's milk soon become obsolete for cheese?

Vegan cheese tastes different from cheese made from cow's milk. But that could change.

The secret lies in casein protein

There are various alternatives, such as cheese made from oat milk, cashew nuts, or coconut oil.

These taste interesting, but many people find that cheese made from cow's milk simply tastes better. It is therefore not surprising that one often hears: “I would love to live vegan, but I simply cannot give up cheese!”

The secret lies in casein protein, which is found in animal milk. It is responsible for the unique taste and meltability of cheese. Until now, no vegan cheese has been able to replicate this component.

Start-ups rely on fermentation

However, start-ups are working on a solution: the production of casein through fermentation. In this process, genetic material from animals such as cows is introduced into microorganisms such as bacteria or yeast in order to produce casein in a targeted manner. This process could economically undercut the production of animal dairy products and make the industrial keeping of dairy cows obsolete.

Ecological advantages and funding

This technology also has ecological advantages, as products manufactured using it have a better environmental footprint. Although products made using this fermentation technique have not yet been approved for sale, they could play an important role in sustainable food systems in the coming years. In Switzerland as well as the EU, a great deal of funding is flowing into the development of these novel protein alternatives.
