Why hard cheese is unhealthy

According to Ayurveda, hard cheese is a very unhealthy food (fermented, often heat-treated, mixed with foreign enzymes and fungi, and stale); self-made fresh cheese, cottage cheese, goat and sheep cheese are the healthier alternatives.

Hard cheese in Ayurveda

According to the principles of Ayurveda, hard cheese is also considered unhealthy, as it is classified as difficult to digest due to its high fat and salt content.

In Ayurveda, good digestion is central, as it is regarded as the key to maintaining health and preventing disease. Hard cheese, eggs, fish, meat and fatty foods are considered difficult to digest.

Ayurveda states that weak digestion can disrupt the balance of the doshas, which can lead to various health problems. The digestive fire (Agni) plays an important role in the transformation of food and is considered a central concept in Ayurveda. A strong Agni enables efficient processing of food and proper absorption of nutrients, while a weak Agni can lead to digestive disorders, accumulation of toxins and imbalance in the body.

Alternatives to hard cheese

Hard cheeses, especially aged varieties such as Parmesan, Emmental or Gruyère, are aged for longer and therefore have a more intense flavour and a firmer consistency. This ageing process leads to a concentration of ingredients, including fat and salt content. While fats and salt can be important for the body in small amounts, excessive consumption of hard cheese — for example after a fondue — can place excessive strain on the digestive system, particularly in individuals with a weak Agni.

Ayurveda emphasises the importance of easily digestible foods in order to strengthen the power of Agni and promote better digestion. Recommended alternatives to hard cheese include, for example, fresh cheese, which is considered easier to digest.

It is important to note that Ayurvedic recommendations are individual and should be tailored to a person's body type (dosha) and health condition. A thorough examination and consultation with an experienced Ayurveda expert is required to obtain precise recommendations suited to individual needs.

Paneer, the homemade cheese commonly used in India, is easy to digest, as is cottage cheese. It is cooling, nutritious and has a high protein content. Cream cheese is somewhat stickier, but still easier to digest than regular cheese.

As a source of fat and protein for plant-based alternatives, products made from legumes, nuts or seeds are generally recommended, for example tofu, macadamia nuts or cashew kernels.
